Cold-brew Coffee at Home

What you’ll need:

- Cold-brew coffee grounds

- 2 medium to large sized mason jars

- Single cup coffee filters

- Ice

- Topping of your choice (cinnamon, nutmeg, etc.)

Directions:

- Start by pouring 1/3 cup of ground coffee into your jar

- Add 1 and 1/2 cups water per 1/3 cup coffee

- Seal jar and let sit for 8-24 hours

- Next, grab your coffee filter and pour contents of jar over filter into your other jar

- Add ice…and now you have your very own cup of cold brew coffee! You may also add water/milk if the result is too concentrated and sprinkle some cinnamon or nutmeg on top for a delicious fall flavor

Aunt Kate’s Tortilla Soup

What you’ll need:

1 can of Garbanzo beans

1 can of whole black beans

1 can of diced tomatoes and green chilies

1 bunch of fresh carrots

Sliced chicken (some people like more chicken in their soup than others, so I’ll let you be the judge how how much you want here.)

1 bunch of cilantro

1 bunch of green onions (white parts only)

1 avocado (mmm)

Shredded cheese

1 box of chicken broth

2 limes

Sprinkle in to taste: garlic salt, cumin

Sour cream

Tortilla chips

Directions:

Add all ingredients to large soup pot and stir on medium to medium-high for 20 minutes.

Serve with sour cream and chips and enjoy!
